Gourmet Sausages and Salad

Gourmet sausages, salad and steamed whole potatoes is an extremely quick and tasty meal taking around 15 minutes to complete. It's the perfect meal to cook when you need to feed the family fast after work.
Most large supermarkets like Coles and Woolworths stock a range of gourment sausages that are also gluten free. Usually the better quality sausages (and also the German Sausages) are made with Rice flour and so are Gluten Free.

Ingredients:

  • 4 Gourmet Sausages (Gluten Free) (Serves 2)
  • 4 desiree potatoes
  • Small serve of mixed lettuce leaves
  • 3 tomatoes
  • 1/4 of a cucumber
  • Aoli
  • 1/2 stem of shallots

Preparation:


Potatoes


  • Wash potatoes. (Leave them whole).

Salad

  • Mix your favourite salad greens, chopped cucumber and roughly cut tomatoes in a bowl and toss. Add you favourite gluten free salad dressing (or make Nanna's Salad dressing below). Then place to one side for serving later.

Nanna's Salad Dressing

  • (Special thanks to my grandmother for this quick and simple salad dressing).
  • Add equal parts olive oil, table vinegar and lemon juice (50 mls of each is plenty) in the bottom of a small container that has a lid (you will need the lid. A milk shake shaker is perfect).
  • Add half a teaspoon of salt and 3 teaspoons of sugar.
  • Liberally grind pepper into the mix and then close the lid.
  • Shake well for a minute or until the ingredients are fully mixed and the sugar dissolved.
  • The mixture should turn creamy white.
  • Voila! Drizzle the dresssing over your salad and toss.

Method:

  • Place whole desiree potatoes in a microwave container. Add 50mls of water and place lid on container. Microwave the potatoes on high for about 6 minutes. (Adjusting the time setting for your microwave). The point is to steam them in the microwave.
  • While the potates are cooking add two teaspoons of olive oil to a pan and place on a medium heat hot plate.
  • Place your gourmet sausages in the pan and begin to cook, turning occasionally.
  • The sausages and potatoes should be ready in about the same time.
  • When the sausages are well browned and cooked through, remove from the heat and allow to cool for about one minute.

Serving:

  • While you are waiting for the sausages to cool, plate the steamed potatoes and salad.
    Add a dollop of gluten free aoli and chopped shallots to the top of the potatoes for that extra treat.
  • Place the cooled sausages to the side of each plate.
  • Enjoy :-)
